Roasted Green Beans and Tomatoes Topped with Feta

Ingredients

  • ½ lb green beans ends trimmed
  • 1 cup of large grape tomatoes
  • 1 tbsp olive oil
  • Sea Salt and Freshly Cracked Pepper to taste
  • 1 clove of garlic minced
  • feta cheese to taste

Instructions

  1. Preheat the oven to 400 degrees.
  2. Spread the trimmed green beans and tomatoes on the baking sheet, then drizzle with olive oil and season generously with sea salt and freshly cracked pepper, to taste. Toss to coat evenly.
  3. Place into the oven for 10 minutes. Remove from the oven then add the minced garlic and gently toss to coat the veggies in the garlic.
  4. Return to the oven and cook for 2 minutes.
  5. Remove from the oven and place onto a serving plate. Sprinkle the top with feta cheese and serve. Enjoy.
