Roasted Parmesan Carrot Fries

Roasted Parmesan Carrot Fries are irresistible with browned crispy edges and perfectly soft centers! Toss the hot fries with grated parmesan and serve with aioli or ketchup. The best snack or side dish to serve with almost any meal!

Ingredients

  • 2 lb large carrots
  • 1 tbsp avocado oil
  • kosher salt and pepper to taste
  • 1/2 cup shaved or grated parmesan cheese

Instructions

  1. Preheat the oven to 400ºF and line a sheet pan with parchment paper.
  2. Peel and cut the carrots into 1/4-inch thick fries. Place them on the prepared sheet pan.
  3. Drizzle with the oil and season with salt and pepper. Use your clean hands to toss until evenly coated, then arrange in a single layer. Use 2 sheet pans if needed, so the fries have some space in between to evenly roast.
  4. Bake for 15 minutes. Sprinkle with parmesan cheese and roast for an additional 4-5 minutes, or until tender and golden-brown.

Notes

  • Store any leftovers in an airtight container in the fridge for up to about 3-4 days. To reheat, place in the air fryer at 360°F for 1-2 minutes or in a toaster oven. You can also reheat in the microwave but they will not crisp up as well.
