Roasted Pork Sandwich with Horseradish Sauce
Creamy yogurt horseradish sauce is the perfect sandwich topping for leftover pork, chicken or beef.
Ingredients
- 1 whole wheat pita bread
- ½ c baby spinach (arugula would be great too)
- 2-3 oz pork roast or chicken or beef, leftover
- ¼ c yogurt plain, low fat
- 1 tablespoon lemon juice
- 1 teaspoon horseradish
- ½ clove garlic (grated)
- salt to taste
- black pepper to taste
Instructions
- Split open pita and fill both halves with equal amounts of baby spinach and leftover pork roast.
- In a small bowl, stir together yogurt, lemon juice, horseradish, garlic, salt and pepper.
- Drizzle creamy horseradish sauce over the pork or serve along side the sandwich as a dipping sauce.
