Roasted Pumpkin Seeds

Ingredients

  • 1 medium pumpkin
  • 2 tablespoons butter or vegetable oil, melted
  • 1 teaspoon salt

Instructions

  1. Use a sharp knife to cut a circle around the stem of the pumpkin to remove and reveal the interior of the pumpkin. Use a large spoon to scrape out the seeds and fibrous strands and place into a large mixing bowl.
  2. Divide the seeds from the fibrous strands and rinse the seeds thoroughly. Pat dry.
  3. Preheat an oven to 275 degrees Fahrenheit.
  4. Drizzle melted butter and salt over seeds and toss to coat. Spread out in an even layer on a baking sheet.
  5. Bake in the preheated oven for 45 minutes. Increase the heat to 350 and bake another 10 minutes, or until seeds are golden brown. Cool completely and store in an airtight container.
