Roasted Red Onions
Roasted Red Onions are thinly sliced rings seasoned with avocado oil, salt, black pepper, and garlic powder, then baked until tender, caramelized, and crisped at the edges. The red onion’s natural sweetness intensifies through roasting, yielding a flavorful side or snack with a balance of soft and crispy textures. This simple method utilizes oven heat to transform basic onion slices into a versatile accompaniment.
Ingredients
- 1 red onion large, sliced into thin circles
- 1 tablespoon avocado oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper crushed
- ½ teaspoon garlic powder
Instructions
- Wash and peel one large red onion. Slice off the root edges, and cut them into two halves. Then, slice each half into ¼-inch thick slices. Use your fingers or a fork to separate the slices into thin rings.
- Preheat the oven to 400°F. While the oven is heating, spread the onion slices / rings evenly, neatly spaced out in an oven-proof baking dish or a cast iron skillet. Toss the slices with avocado oil, and toss to coat. Then, add a teaspoon of salt, and ½ teaspoon each of black pepper and garlic powder and use your hands or a fork to toss them and spread them out evenly.
- Roast the onions for about 10 minutes. Then, stir once and then continue roasting for another 10 or so minutes, until the onions are tender and caramelized, and starting to get crispy on the sides! Serve as a side or snack!
Notes
- Red onions roast sweeter than yellow, but yellow onions can be used with adjusted roasting time and temperature.
- Avocado oil's high smoke point suits high-temperature roasting; olive oil requires lowering oven heat and longer roasting.
- Use a well-oiled cast iron skillet for crispier onion edges but prevent sticking by coating the pan surface thinly with oil.
