Ingredients
- 2 lbs. strawberries (about 3 cups)
- 3 tablespoons granulated sugar , adjust to taste
- 2 tablespoons Freshly squeezed lemon juice or lime juice
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the strawberries, remove the stems, and cut the larger ones in half lengthwise. Leave the smaller strawberries whole.
- Place the strawberries on a large-sized baking sheet, preferably non-stick. Sprinkle with sugar, and drizzle with lemon juice. Gently mix with a spatula.
- Bake for about 40 minutes, or until a shiny syrup forms and the strawberries are tender. Remove from the oven and transfer the warm strawberries and syrup to an airtight container – if not using a non-stick baking sheet, the syrup may stick to the bottom as it cools. Before refrigerating, let the strawberry compote cool completely.
