Ingredients

  • 1 3/4 pounds sweet potato peeled and cut into 1/2 to 3/4 inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • parsley chopped (optional for garnish, or cilantro

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.
  3. Spread the seasoned sweet potato cubes in a single layer on a parchment-lined baking sheet.
  4. Bake for 25-30 minutes in the preheated oven, flipping the cubes halfway through the cooking time.
  5. When sweet potatoes are golden and crispy, remove them from the oven. If desired, season with additional salt and pepper, and garnish with parsley or cilantro before serving.
