Roasted Sweet Potatoes

These perfectly roasted sweet potatoes are the perfect fall side dish.

Ingredients

  • 1 ½ lbs sweet potato cubed
  • 3-4 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper fresh ground

Instructions

  1. Preheat oven to 450 degrees.
  2. Pour cubed sweet potatoes into a medium mixing bowl and add olive oil, salt, and pepper, Toss gently with hands ensuring that all potatoes have oil on them.
  3. Pour potatoes onto a sheet pan and make sure they are laid out into a single layer for even cooking. Bake for 20-25 minutes. Give them a quick stir about halfway through.
  4. Add additional seasoning if desired.

Notes

  • I used the precut sweet potatoes and I got some yummy small bits with those.
