Roasted Sweet Potatoes and Apples

Ingredients
- 3 sweet potato peeled and cubed, large
- 2 apple cored and cubed, large
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 400°F.
- In a large bowl, toss the sweet potatoes and apples with olive oil, cinnamon, and salt until well coated.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 35 minutes, stirring halfway through, until the sweet potatoes are tender and the edges are slightly caramelized.
