Ingredients

  • 3 sweet potato peeled and cubed, large
  • 2 apple cored and cubed, large
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, toss the sweet potatoes and apples with olive oil, cinnamon, and salt until well coated.
  3. Spread the mixture evenly on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for about 35 minutes, stirring halfway through, until the sweet potatoes are tender and the edges are slightly caramelized.
