Roasted Sweet Potatoes & Pears

Ingredients
- 3 sweet potato
- 2 pear
- 3 shallot
- 2 Tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
Instructions
- Preheat the oven to 400.
- Peel the sweet potatoes and cut them into 1 inch cubes.
- Peel and core the pears and cut them into 1 inch cubes.
- Dice the shallots finely.
- Combine the sweet potatoes, pears, shallots, olive oil, salt, pepper and thyme in a bowl and mix well.
- Spread the mixture in a 8 x 20 casserole dish and roast for 25-30 minutes until the vegetables are tender.
