Roasted Tomato Vinaigrette

Ingredients

  • ¾ pound yellow tomato wood grilled or roasted in the oven
  • ¾ teaspoon shallot minced
  • 1½ teaspoons garlic minced
  • 1 tablespoon Dijon mustard
  • ¼ cup red wine vinegar
  • 1 tablespoon fresh marjoram chopped
  • 1 ounce Gorgonzola cheese
  • 1 ounce Stilton cheese
  • 1 cup Chef’s Blend olive oil ½ olive oil and ½ canola oil

Instructions

  1. Puree the roasted tomatoes in a food processor, food mill, or blender.
  2. Add pureed tomatoes and remaining ingredients, except oil, to a bowl and mix together.
  3. Slowly add oil while whisking to incorporate the oil into the dressing.
