Roasted Turkey Breast with Blue Cheese Mushroom Gravy

Ingredients

  • 3 tbsp butter unsalted
  • ½ cup onion thinly sliced
  • 8 oz crimini mushroom sliced, or baby bella mushroom
  • 4 cloves garlic minced
  • ½ tsp rosemary minced, fresh
  • ¾ cup turkey broth
  • ½ cup brandy
  • 1 cup blue cheese crumbled

Instructions

  1. Melt the butter in a large skillet over medium-high heat.
  2. Add the onion and sauté 3-5 minutes.
  3. Add the mushrooms, garlic and rosemary, sauté for an additional 4-5 minutes.
  4. Add the broth and brandy, bring to a boil.
  5. Boil until the liquid is thick enough to coat a spoon lightly, 5-6 minutes.
  6. Add the blue cheese and stir just until the cheese melts, about 1 minute.
  7. Spoon the sauce over sliced turkey.
