  • 12 egg
  • ½ cup milk or greek yogurt, 2%, cream, half and half, whole
  • ½ teaspoon basil dried
  • ¼ teaspoon oregano dried
  • ¼ teaspoon thyme dried
  • ½ pound asparagus ends trimmed and cut into 1 inch pieces
  • 1 pint tomatoes cherry or grape
  • 1 onion chopped roughly, large
  • 2 spinach about 3-4 cups, fresh leaves, handfuls
  • 2 TBS olive oil
  • ½ teaspoon salt sea salt
  • ½ teaspoon black pepper
  • ¼ cup goat cheese crumbles
  • Non-stick cooking spray
