Roasted Yams with Balsamic, Goat Cheese, and Caramelized Onions

These roasted yams are topped with savory caramelized onions, tangy goat cheese, and a balsamic glaze.

Ingredients

  • 2 yams
  • 2 tbsp balsamic glaze
  • ½ cup goat cheese
  • ½ yellow onion
  • olive oil
  • salt and pepper to taste

Instructions

  1. Wash yams (sweet potatoes) well. Poke several holes into the yams with a fork. 
  2. Preheat oven to 400 degrees.
  3. Roast yams in the oven for 40-50 minutes, until softened.
  4. Let yams cool for 10 minutes.
  5. While yam are cooling, heat a drizzle of olive oil over low heat. Add onions. Cook, stirring frequently, for 10 minutes or until lightly caramelized.
  6. Slice open the yams. Top with the goat cheese and caramelized onions.
  7. Drizzle with the balsamic glaze.
  8. Note: If you want to make your own balsamic glaze, simply bring 1 cup of balsamic vinegar to a boil. Simmer over medium heat for 10-15 minutes, until thickened.
