  • 1 pound yellow squash sliced into 1/2-inch rounds
  • 4 teaspoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt to taste
  • ground black pepper to taste
  • parsley chopped (for garnish, fresh

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, toss the squash rounds with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Place the seasoned squash in a single layer on a baking sheet.
  4. Roast in the preheated oven for 12-15 minutes, or until tender and lightly browned.
  5. Remove from the oven and serve immediately. Garnish with fresh parsley.
