Ingredients

  • 2 cups self-rising flour
  • 1 teaspoon baking powder
  • 1 teaspoon nutmeg
  • ¼ teaspoon ginger powder
  • ¼ teaspoon allspice powder
  • ¼ tsp cinnamon
  • 1 pinch clove powder
  • ½ cup unsalted butter , at room temperature, cut into pieces
  • 4 tablespoons brown sugar
  • 5 tablespoons raisins
  • 4 tablespoons dried currants
  • 1 large egg
  • 3 tablespoons milk

Instructions

  1. Preheat the oven to 350 F (175˚C) for 15 minutes.
  2. Line 2 baking sheets with parchment paper.
  3. Sift the flour and baking powder into a large bowl.
  4. Add the softened butter and rub lightly between both hands, fingertips, until the mixture resembles fine breadcrumbs.
  5. Add all the spices, brown sugar and dried fruits and mix until all the ingredients are well incorporated.
  6. In a bowl, beat the egg with 1 tablespoon of milk.
  7. Make a well in the center of the flour mixture, add the beaten egg.
  8. Stir the dry ingredients into the egg mixture to create a stiff dough.
  9. If the mixture remains dry, add milk, 1 tablespoon at a time, until the dough holds together.
  10. Divide the dough into 12 rock-shaped mounds.
  11. Place them, well spaced out, on the baking sheets.
  12. Bake for 15 minutes or until golden and well puffed. They should be firm to the touch.
