Romesco (Roasted Red Pepper Sauce)
Romesco sauce combines roasted red peppers, nuts, garlic, and spices blended smoothly into a flavorful, slightly smoky sauce. Its creamy texture with a touch of heat comes from smoked paprika and red pepper flakes, balanced by vinegar and parsley freshness. This versatile sauce complements grilled vegetables, fish, meats, or can be used as a dip or spread.
Ingredients
- 2 large red bell pepper 8 ounces, roasted
- 1/2 cup almonds 73 grams; or any other nut, whole
- 2 garlic 10 grams, cloves
- 1 tablespoon red wine vinegar (15 grams)
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes use more for more spice, crushed
- 1/4 cup extra-virgin olive oil (54 grams)
- 1/4 cup parsley 14 grams, fresh
- 3/4 teaspoon salt 6 grams, fine sea salt
- 1/4 cup water (or 1 fresh Roma tomato)
Instructions
- In a high-speed blender, combine all of the ingredients. Blend until smooth, stopping to scrape down the sides, as needed.
- Taste and adjust any seasoning, as needed. You can add up to 1/4 teaspoon more salt, for extra flavor, or more red pepper flakes, if you want a spicier flavor. You can also add more water, just a tablespoon at a time, until the consistency is as runny as you like. Transfer to an airtight jar and store in the fridge until you're ready to use it. You can store this sauce for up to a week in the fridge.

- This sauce can be stored in an airtight container in the refrigerator for up to one week.
- For a nut-free version, substitute almonds with cooked chickpeas without changing other ingredients.
- Roasting your own red bell peppers at home is a straightforward alternative to using jarred roasted peppers.
