ROSEWATER SYRUP:
  • 2 ½ cups water
  • 4 cups raw sugar
  • ¼ cup fresh lime juice
  • ½ cup rosewater
CUCUMBER AND ROSE COLLINS:

  • 30 ml gin 1 oz

  • sparkling water soda
  • mint sprig and dried food grade rose petals

Instructions

    Cup of Yum
  1. Add the water to a medium saucepan, along with the suger, and bring to a boil. Reduce to a simmer, and simmer for 10 minutes, until the sugar is dissolved. Add the lime juice and rosewater and cook for a further 10 minutes, stirring occasionally. Pour into a sterilised jar or bottle and allow to cool.
  2. Use a peeler to peel long strips of cucumber. The cucumber should stick to the sides of your glass. Press it around the glass to create a swirl effect. Add the gin and rosewater syrup, ice and top with sparkling water. Stir well. Add a sprig of mint and rose petals. Serve
