Rosemary Roasted Potatoes

Ingredients

  • 24 potatoes potatoes halved, Baby Boomer or other Little Potato Company variety
  • ¼ cup extra virgin olive oil
  • 2 tablespoons rosemary minced, fresh
  • 2 cloves garlic (grated)
  • 1 teaspoon salt
  • chili flakes (optional garnish)

Instructions

  1. Preheat oven to 425 degrees and line a baking sheet with foil. 
  2. Skatter potato halves on the baking sheet then toss well with olive oil, rosemary, garlic and salt. Roast until crispy, about 45-50 minutes, tossing once halfway through.
