Rotisserie Chicken Salad
This Rotisserie Chicken Salad mixes shredded rotisserie chicken with chopped red onion and celery, bound together with mayonnaise and Dijon mustard. Seasoned with salt and black pepper, it results in a creamy, flavorful salad suitable for sandwiches, wraps, or served over greens.
Ingredients
- 2 cups chicken shredded rotisserie
- ¼ cup red onion chopped
- ½ cup celery chopped
- ½ cup mayonnaise made with avocado oil
- ½ Tablespoon Dijon mustard
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Add chicken, red onion, celery, mayo, mustard, salt and pepper into a large bowl.
- Stir to combine. Taste and add more salt and pepper or mayo, if needed.
- Enjoy right away or chill before serving. Serve with crackers for a snack or appetizer, on bread or a wrap for a sandwich or over a bed of greens.
Notes
- If rotisserie chicken is unavailable, use shredded chicken from slow cooker, Instant Pot, or grilled breast with seasoning.
- Mayonnaise may be substituted with plain Greek yogurt for a tangier, lighter alternative.
- Add sliced grapes, apples, or dried cranberries for sweetness or chopped nuts for crunch.
- Fresh herbs can enhance flavor; consider adding for variety.
- For heat, mix in Sriracha; smoked paprika adds a smoky note.
