Ingredients

  • 2 cups chicken shredded rotisserie
  • ¼ cup red onion chopped
  • ½ cup celery chopped
  • ½ cup mayonnaise made with avocado oil
  • ½ Tablespoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Add chicken, red onion, celery, mayo, mustard, salt and pepper into a large bowl.
  2. Stir to combine. Taste and add more salt and pepper or mayo, if needed.
  3. Enjoy right away or chill before serving. Serve with crackers for a snack or appetizer, on bread or a wrap for a sandwich or over a bed of greens.

Notes

  • If rotisserie chicken is unavailable, use shredded chicken from slow cooker, Instant Pot, or grilled breast with seasoning.
  • Mayonnaise may be substituted with plain Greek yogurt for a tangier, lighter alternative.
  • Add sliced grapes, apples, or dried cranberries for sweetness or chopped nuts for crunch.
  • Fresh herbs can enhance flavor; consider adding for variety.
  • For heat, mix in Sriracha; smoked paprika adds a smoky note.
