Rujak Serut - Indonesian sweet potato slaw

Ingredients

  • 1 large sweet potato Peel and grate.
  • 2 apple Peel, core and grate
  • 1 cup pineapple Cut into small pieces/ cubes.
  • ½ cup pomegranate seeds
  • 3 teaspoons tamarind paste
  • 3 ½ teaspoons palm sugar or dark muscovado sugar or dark soft brown sugar
  • 1 ½ teaspoons chili flakes or 2 bird’s eye chilies
  • ¼ teaspoon salt

Instructions

  1. Put all the fruits in a mixing bowl. 
  2. Add in the tamarind, sugar, chillies, and salt.
  3. Mix and stir well until everything is thoroughly blended.
  4. Try to taste if the flavour is balanced. You may have to add more flavour ingredients. This can happen because the intensity and flavour of tamarind paste vary from one brand to another. You’ll want your Rujak Serut to taste sweet, sour, salty, and spicy all at the same time.
  5. Enjoy.

Notes

  • Any crunchy apples will be a good option though I always use granny smith apples.
  • You can make tamarind paste by submerging the tamarind block in hot water. When it softens, sieve the tamarind and discard the seeds and pulp.
