Russian Pancakes Oladi

If you like regular pancakes, wait till you try Oladi! The sweet smell of cooking, the extra crispy fried edges and the fluffy, chewy inside is only a small part of what makes Russian Pancakes awesome. Once you sink your teeth in, you will not let them go.

Ingredients

  • 2 cup flour
  • 3 eggs
  • 2 cup buttermilk
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3 tbsp sugar
  • canola oil for frying

Instructions

  1. Whisk the eggs together with the buttermilk, salt and sugar.
  2. Add the flour and baking powder and mix to combine.
  3. Heat up a pan with the oil until sizzling hot. Lower the heat to medium and use a tablespoon to pour small amounts of pancake batter into the hot oil.
  4. Saute the pancakes on each side until golden brown. In between every batch add a little more oil to the skillet.
  5. Serve them while they are still warm. They will be a little crispy on the sides.
