Saffron Rice

Ingredients

  • 3 cups chicken broth , divided
  • 3/4 teaspoon saffron threads
  • 2 tablespoons butter
  • 2 cups uncooked basmati rice , rinsed well until clear
  • 1 teaspoon kosher salt

Instructions

  1. Add chicken broth to a large pot and bring to a simmer.
  2. Steep the saffron in 1/2 cup boiling water or chicken broth.
  3. Reserve the rest of the liquid in a bowl.
  4. To the pot add the butter on medium-high heat.
  5. Stir in the rice and salt.
  6. Cook, stirring constantly, until the rice begins to absorb the butter and becomes opaque,
  7. Note: Do not allow the rice to brown.
  8. Pour the remaining chicken broth along with the saffron-infused broth and stir.
  9. Cover, reduce heat to low, and cook for 18-20 minutes, or until all of the liquid is absorbed.
  10. Turn off heat, let sit for 5-10 minutes before opening the cover.
