Ingredients

  • 225 g halloumi cheese (See Note 1)
  • 1 egg beaten
  • 2 tbsp semolina flour
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp black sesame seeds
  • 1 tsp dried oregano
  • 1 lemon sliced for serving

Instructions

    Cup of Yum
  1. Cut the cheese horizontally through the middle.
  2. On a small plate using a fork, whisk the egg. On another small plate add the semolina. Dip each piece of cheese into the beaten egg and coat all over. Shake off excess and coat with the semolina on all sides.
  3. In a skillet over medium heat add the olive oil. Fry the cheese for a couple of minutes on each side until golden brown. Remove cheese from heat and cut each piece into 4 pieces.
  4. Transfer to a plate and drizzle with honey and divided black sesame seeds and oregano. Serve with lemon slices.

Notes

  • The cheeses used in Greece to make traditional saganaki are kefalotyri, kefalograviera and graviera. They are all a medium hard, yellow cheese with a slight nutty flavor. In Cypress halloumi is used. I use kefalotyri when I can or halloumi which is more readily available to me. Try them all if you can and find a favorite.
  • Recipe adapted from Rick Stein's From Venice to Istanbul cookbook.
