Salmon Caper and Crispy Broccolini Pasta

This creamy salmon pasta with capers, crispy broccolini and lemon is a delicious and easy weeknight meal. The briny broccolini mixture complements the richness of the salmon perfectly. And the best part? This delicious salmon capers and broccolini pasta dish is a one sheet pan meal!

Ingredients

  • 4 salmon filets
  • 1 bunch broccolini
  • olive oil
  • 6 oz salt and pepper
  • lemon juice
  • 8 ounces preferred pasta
  • Optional for garnish: fresh chives, dill or parsley.
caper cream sauce
  • 3 garlic cloves minced
  • 2 tbsp capers
  • 2 tbsp Coconut aminos 
  • 1 cup chicken broth
  • 2 cups heavy cream

Instructions

  1. Heat oven to 425 F. Arrange salmon filets and broccolini on a sheet pan. Brush the salmon with olive oil and toss with broccolini to coat. Season with salt and pepper. Drizzle over lemon juice. Bake for 20 minutes.
  2. While salmon is baking cook pasta according to package directions and combine all sauce ingredients in a saucepan; reduce by half over medium heat.
  3. Combine the sauce and cooked pasta until well coated. Top with salmon filets and broccolini. Cut salmon filets and broccolini into bite size pieces if desired.
  4. Serve immediately with chives, fresh dill or parsley, optional.
