Ingredients

Wasabi Mayonnaise
  • 2 tablespoon real mayonnaise
  • 1 tbsp Wasabi paste
  • 1 teaspoon rice vinegar
Bowls
  • 1 cup sushi rice cooked and cooled to room temperature
  • 2 sheets of nori (toasted seaweed) dampened
  • 4 oz smoked salmon
  • 1 cup cucumber cut into matchsticks
  • 1 avocado sliced
  • 2 scallions sliced
  • 1 teaspoon black sesame seeds
  • soy sauce

Instructions

  1. In a small bowl, whisk together the mayonnaise, wasabi paste, and rice vinegar. Refrigerate until ready to use.
Bowls
  1. Divide rice between two serving bowls
  2. With your fingers, dampen nori with cold water, and cut into strips. Divide the nori between the two bowls.
  3. Roll smoked salmon slices into cigar shapes and divide between the bowls
  4. Top the bowls with avocado, cucumber slices and scallions.
  5. Sprinkle each bowl with sesame seeds, and drizzle with wasabi mayonnaise
  6. Serve with soy sauce on the side.

Notes

  • You can substitute any short-grained rice, such as arborio, for the sushi rice.
  • Reduce the amount of wasabi paste if you want a milder sauce.
  • If you can't find wasabi paste, sriracha is a delicious substitute. 
  • Use gluten-free soy sauce to make this gluten-free
