Ingredients
- 8 ounces salmon
- 2 to 3 slices prosciutto (enough to cover salmon)
- 1/4 cup butter (divided)
- 1 tablespoon olive oil
- 1/4 cup slivered almonds
- 2 cloves garlic (minced)
- salt and pepper (to taste)
Instructions
- Place olive oil and half of the butter in a medium frying pan on medium heat.
- Salt and pepper salmon.
- Wrap salmon in prosciutto covering fully.
- Place salmon skin side down into heated frying pan. Cook for 2-4 minutes (depending on thickness). When the salmon is ready to flip, it it will be white/light pink about halfway up the side of the fish.
- After flipping the salmon, add the minced garlic.
- Continue to cook till the entire salmon, on the side, has turned white/light pink.
- Take salmon out of pan and set aside.
- Add remaining butter and almonds to pan.
- Cook on low heat for around 5 minutes until the butter and almonds have lightly browned.
- When the almond sauce is done, drizzle it over the salmon and serve.
