Salmon with Brown Butter Almond Sauce

Ingredients

  • 8 ounces salmon
  • 2 to 3 slices prosciutto (enough to cover salmon)
  • 1/4 cup butter (divided)
  • 1 tablespoon olive oil
  • 1/4 cup slivered almonds
  • 2 cloves garlic (minced)
  • salt and pepper (to taste)

Instructions

  1. Place olive oil and half of the butter in a medium frying pan on medium heat.
  2. Salt and pepper salmon.
  3. Wrap salmon in prosciutto covering fully.
  4. Place salmon skin side down into heated frying pan. Cook for 2-4 minutes (depending on thickness). When the salmon is ready to flip, it it will be white/light pink about halfway up the side of the fish.
  5. After flipping the salmon, add the minced garlic.
  6. Continue to cook till the entire salmon, on the side, has turned white/light pink.
  7. Take salmon out of pan and set aside.
  8. Add remaining butter and almonds to pan.
  9. Cook on low heat for around 5 minutes until the butter and almonds have lightly browned.
  10. When the almond sauce is done, drizzle it over the salmon and serve.
