Ingredients

  • 7 medium tomatillo husked
  • 3 medium jalapeno pepper stems removed
  • 2 cloves garlic peeled, fresh
  • ½ cup cilantro packed, fresh leaves, 8 g
  • ½ cup white onion roughly chopped, 80 g
  • ½ teaspoon kosher salt
  • tortilla chips for serving

Instructions

  1. To a medium saucepan over medium-high heat, add the tomatillos, jalapenos, and garlic. Cover with water and bring to a boil.
  2. Once boiling, reduce heat to medium. Simmer for 10-15 minutes, or until the tomatillos have softened and turned pale green. Drain the cooked vegetables. Then, transfer them to a food processor.
  3. Add cilantro, onion, and salt. Puree the mixture until you reach your desired consistency.
  4. Serve with tortilla chips.
