Ingredients
- 1 cup Medjool dates packed
- 1 cup macadamia nuts raw or dry roasted
- 1 teaspoon pure vanilla extract
- ¼ teaspoon sea salt reduce if using salted macadamia nuts
- desiccated coconut optional, for rolling
Instructions
- Add all 4 ingredients to your food processor and process until combined and you have an even consistency, without overprocessing. (Some texture is nice.)
- Scoop the batter and roll it into bite-sized balls, placing each one on a flat plate or baking sheet. You should get around 18 balls depending their size.
- Optional: Roll some or all of the balls into dessicated coconut.

Notes
- Use raw macadamia nuts OR dry roasted, with or without salt. However, if the nuts are salted, halve the added salt.
- Don’t overprocess the mixture. These taste best with a little texture; process until combined without overdoing it.
- These energy bites keep at room temperature for 2-3 days, in the fridge for up to 1 week or in the freezer for up to 3 months.
- If your dates are very dry, soak them in hot water for 10-15 minutes, and then drain them before adding them to your food processor. This will help soften them and make them easier to process.
