Ingredients
- ½ cup uncooked popcorn kernels
- 1 cup light brown sugar
- ¼ cup unsalted butter
- ½ cup light corn syrup
- ½ cup sweetened condensed milk
- ½ teaspoon sea salt more or less to taste
Instructions
- Pop ½ cup uncooked popcorn kernels with an air popper machine into a large bowl. Set aside.
- Add 1 cup light brown sugar, ¼ cup unsalted butter, and ½ cup light corn syrup to a medium saucepan and heat over medium-high heat. Bring to a boil, then add ½ cup sweetened condensed milk and ½ teaspoon sea salt.
- Allow the caramel to gently boil for about 3-4 minutes until it gets to the softball stage, or 235-240 degrees Fahrenheit on a candy thermometer. You can also test this by dropping a small amount of caramel in small bowl of cold water. At the softball stage it should form a soft, pliable ball that is easily squished between your fingers. Be careful not to let the caramel burn while bringing it to this stage.
- Once it reaches the softball stage, carefully pour the caramel over the popped popcorn. Mix with a wooden spoon until all of the popcorn is evenly coated. Let it cool completely before serving.
