Salted Maple Granola

Crispy crunchy and healthy granola made with gluten free oats and quinoa, mixed nuts and salted maple syrup.

Ingredients

  • 2 cups rolled oats GF if needed
  • 3/4 cup uncooked quinoa
  • 1 1/4 cup mixed nuts and seeds
  • 1/2 cup dried cranberries
  • 1/4 teaspoon sea salt
  • 1/2 cup maple syrup can sub honey
  • 1/2 cup almond or peanut butter
  • 1/4 cup melt coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. In a large skillet over medium heat, toast oats and quinoa for around 5 minutes.
  2. Combine the nuts/seeds and cranberries in a large bowl, then add the toasted oats and quinoa and stir.
  3. In a small saucepan, combine the maple syrup, peanut/almond butter, coconut oil, vanilla and salt. Stir until melted.
  4. Add the maple syrup mix onto the dry ingredients, and stir until combined.
  5. Press into a 9x13 baking dish and bake at 180 C for 25-30 minutes or until golden brown. Let it cool slightly then break apart into granola clusters.
