Samoas Overnight Oats
Have dessert for breakfast with this Samoas overnight oats recipe! Packed with over 25 grams of protein, it's loaded with caramel, chocolate, and coconut flavors—just like the classic Girl Scout cookie.

Ingredients
- ½ cup old fashioned rolled oats
- ¾ - 1 cup light coconut milk or unsweetened almond milk
- 1 coop chocolate protein powder
- 1 Tablespoon Unsweetened toasted shredded coconut plus more for topping
- ½ Tablespoon Date Caramel plus more for topping
- 1 teaspoon chia seeds
- ½ teaspoon vanilla extract
- pinch of sea salt
- 1 Tablespoon chocolate chips I used Lily’s
- Toppings: toasted coconut date caramel and chopped chocolate (or chocolate chips)
Instructions
- Combine all ingredients except the toppings in a small container or mason jar.
- Cover the container with a lid and place in the fridge overnight (or at least 1-2 hours).
- Bring out of the fridge in the morning and stir. You'll notice that the protein powder, oats and chia seeds soak up a lot of the liquid so you may want to add a little more milk before serving.
- Top with toasted shredded coconut, a drizzle of date caramel and chopped chocolate or chocolate chips. Enjoy!

Notes
- Protein powder: If you use a plant-based protein powder you will likely need more milk, probably about 1-1 ¼ cup to get the proper consistency.
