Ingredients

  • ½ cup old fashioned rolled oats
  • ¾ - 1 cup light coconut milk or unsweetened almond milk
  • 1 coop chocolate protein powder
  • 1 Tablespoon Unsweetened toasted shredded coconut plus more for topping
  • ½ Tablespoon Date Caramel plus more for topping
  • 1 teaspoon chia seeds
  • ½ teaspoon vanilla extract
  • pinch of sea salt
  • 1 Tablespoon chocolate chips I used Lily’s
  • Toppings: toasted coconut date caramel and chopped chocolate (or chocolate chips)

Instructions

    Cup of Yum
  1. Combine all ingredients except the toppings in a small container or mason jar.
  2. Cover the container with a lid and place in the fridge overnight (or at least 1-2 hours).
  3. Bring out of the fridge in the morning and stir. You'll notice that the protein powder, oats and chia seeds soak up a lot of the liquid so you may want to add a little more milk before serving.
  4. Top with toasted shredded coconut, a drizzle of date caramel and chopped chocolate or chocolate chips. Enjoy!

Notes

  • Protein powder: If you use a plant-based protein powder you will likely need more milk, probably about 1-1 ¼ cup to get the proper consistency.
