Ingredients

  • 1 kg sardines cleaned, heads and backbones removed
  • 2 tbsp orange or lemon juice
  • 1 tsp sugar optional
  • bay leaf
Filling
  • 3 tbsp extra virgin olive oil
  • 10 tbsp breadcrumbs toasted
  • 50 gms raisins or sultanas
  • 50 gms pine nuts
  • 1 tbsp parsley chopped
  • salt to taste
  • black pepper to taste

Notes

  • These are good warm, cold or at room temperature (the way I prefer them!).
