Ingredients
- 1 tablespoon olive oil
- 1 small onion chopped
- 2 garlic cloves minced
- 4 ounces smoked sausage chopped
- 3 cups chicken broth
- 14.5 ounces canned diced tomatoes with juice
- 8 ounces coarsely chopped kale
- 16 ounces canned Great Northern beans drained and rinsed
- salt and pepper to taste
Instructions
- Heat the olive oil in a large saucepan over medium-high heat.
- Add the onion, garlic and sausage and cook for about 5 minutes or until the onion has wilted.
- Add the chicken broth, diced tomatoes, beans and kale.
- Bring to a boil over high heat.
- Reduce the heat to a simmer and cook until the kale is tender - approximately 15-20 minutes.
