Sausage and Mushroom Breakfast Frittata

This breakfast frittata is filled with chunks of sausage, slices of mushrooms and sweet tomatoes making this a breakfast everyone will love. So simple to make and full of so much flavor!

Ingredients

  • 4 ounces ground sausage
  • 6 ounces mushrooms sliced
  • 2 cups spinach
  • 1 cup cherry tomatoes sliced
  • 3 Tablespoons green onions sliced
  • 8 eggs
  • 1/2 cup heavy cream
  • 1 cup mozzarella cheese shredded
  • salt and pepper

Instructions

  1. Preheat oven to 375 degrees. In a medium-sized skillet, add 4 ounces ground sausage. Sauté and crumble until cooked throughout. Remove and set aside on a plate.
  2. Add 6 ounces mushrooms and sauté for 1-2 minutes, then add 2 cups spinach until it starts to wilt. Add 1 cup cherry tomatoes and 3 Tablespoons green onions and add the sausage back to the mixture.
  3. In a medium bowl, combine 8 eggs, 1/2 cup heavy cream, 1 cup mozzarella cheese, salt and pepper. Pour on top of the sausage and vegetables. Bake for 15-20 minutes or until the top is golden brown and the egg mixture is set.
