Ingredients
- 10 whole eggs
- 1 pound Italian sausage
- 2 cups Italian blend of cheeses, shredded divided
- 1 red bell pepper diced
- ½ yellow onion diced
- ½ cup cream cheese
- ⅓ cup heavy cream
- 1 tablespoon butter
- 1 tablespoon fresh parsley chopped
- 1 teaspoon garlic salt
- ¼ teaspoon salt
- ½ teaspoon ground black pepper divided
Instructions
- Preheat oven to 350°F. Add the ground sausage to a skillet and brown it, then remove and set it aside to cool.
- In the same skillet (leaving behind any fat) add in the butter, red bell pepper, onion, salt and half the ground black pepper. Sauté until tender, then set aside to cool.
- Add the eggs, heavy cream, garlic salt and remaining ground black pepper in a mixing bowl. Whisk until well combined.
- Pour half the eggs into a 9 X 13 casserole baking dish that's been sprayed with olive oil. Add half the sausage, peppers, onions, shredded cheese and the cream cheese in small dollops, all evenly distributed. Repeat with the remaining ingredients, ending with the shredded cheese over the top.
- Bake for 30 minutes or until the eggs have set. Allow to cool before cutting into. Store leftovers in the fridge for a few days or freeze.
