Sausage and Peppers

Sausage and Peppers combines precooked sausage rounds with thinly sliced red and yellow bell peppers and onions tossed in olive oil, garlic, and Italian seasoning, then roasted until tender with slightly browned edges. The baking method softens the vegetables while crisply caramelizing the sausage edges, creating a savory, balanced dish. It works well served alongside rice or pasta or made into a hoagie sandwich with melted provolone and toasted buttered rolls.

Ingredients

  • 12 ounces sausage cut into 1/2-inch rounds, precooked
  • 1 red bell pepper sliced into 1/4-inch strips, medium
  • 1 yellow bell pepper sliced into 1/4-inch strips, medium
  • 1 onion sliced into 1/4-inch strips, small, yellow
  • 1-2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • salt to taste, Kosher salt
  • black pepper to taste, Kosher salt
  • crushed red pepper flakes optional, dash
  • parsley optional, garnish or basil

Instructions

  1. Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper.
  2. Place the sausage rounds, pepper strips, and onion on the prepared pan. Drizzle with olive oil. Top with garlic, Italian seasoning, salt, pepper, and crushed red pepper flakes, if using. Toss well until evenly coated.
  3. Arrange in an even layer and bake for 20 to 25 minutes, stirring halfway, or until vegetables are tender and slightly browned.
  4. Remove from the oven and serve immediately.
  5. Serve with rice, pasta (can add marinara sauce), or make a sausage pepper hoagie sandwich. Butter hoagie rolls and toast in the oven. Top with sausage, peppers, and provolone cheese. Broil just until the cheese is melted and serve warm. You can also add to a salad or enjoy with eggs.
