Sausage and Sauerkraut Soup

Ingredients

  • 1 pound kielbasa , chopped into bite-size pieces
  • 2 cups Sauerkraut , rinsed and drained
  • 1 tablespoon unsalted butter
  • 1/2 cup russet potato , peeled and chopped into 1/2 inch pieces
  • 1/4 cup celery , chopped
  • 1/2 cup sweet onion , chopped
  • 1/2 teaspoon dried thyme
  • 8 cups chicken broth
  • 1/2 cup apple juice
  • 1/4 teaspoon ground white pepper
  • fine sea salt to taste
  • sour cream , for creaminess or garnish

Instructions

  1. In a large Dutch oven or pot, melt butter over medium heat. Add chopped potato.
  2. Saute until potato starts to turn translucent. Add onion and celery, cooking for an additional 3-4 minutes until they are just about to soften, but not limp.
  3. Stir in kielbasa, sauerkraut and dried thyme, cooking for another 1-2 minutes.
  4. Add chicken broth. Bring to a low simmer for 5-10 minutes, or until potatoes are fully softened.
  5. Stir in apple juice and season with Kosher salt and freshly ground pepper.
  6. If you like sour cream, add 1/2 cup to add creaminess to the soup or use a garnish on top of plated soup.
