Ingredients

  • 8 ounces ground pork sausage
  • ½ cup diced red bell pepper
  • 6 cups bread cubes slightly dried
  • 2 cups shredded cheddar cheese about 8oz, divided
Egg Mixture
  • 4 large eggs
  • 1 ½ cups milk
  • ½ cup half and half or light cream
  • ½ teaspoon dry mustard powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder

Instructions

    Cup of Yum
  1. Cook sausage in a skillet over medium heat until no pink remains, drain the fat and return the sausage to the pan. Add the peppers and cook until slightly tender, about 3 minutes. Set aside to cool.
  2. Whisk eggs, milk, cream, dry mustard, salt, pepper, and onion powder in a large bowl (add ½ teaspoon black pepper if desired).
  3. Add the bread, peppers, sausage, and half of the cheese to the egg mixture. Toss to combine and let rest for 5 minutes. Toss again until the liquid is absorbed.
  4. Add the mixture to a greased 2 qt baking dish. Cover with foil and refrigerate for at least 30 minutes or up to 48 hours.
  5. Preheat the oven to 350°F. Bake covered for 30 minutes. Uncover, top with remaining cheese, and bake an additional 15-20 minutes or until set in the middle.
  6. Rest 10 minutes before cutting.

Notes

  • Leftover vegetables can be added. If adding additional fresh vegetables,  ensure they're cooked to remove excess moisture.
  • Any dry or stale bread will work well. Be sure to allow the bread to soak in the exx mixture. Toss gently so the bread doesn't break up too much.
  • Swap out the cheese for any cheeses you have on hand but be sure to include a flavorful bold cheese as well.
  • Leftover strata can be stored in the fridge in a covered container for up to 3-4 days. Reheat in the oven or on the stovetop until heated through.
