  • 1 red bell pepper diced
  • 1 pound ground mild Italian sausage
  • 2 tablespoons tomato paste
  • 770 mL marinara sauce (Rao's, 1 jar)

  • 1 cup parmesan plus extra for garnish
  • 340 grams orzo
  • 2 cups spinach chopped
  • 2 cups peas frozen
  • basil garnish

Instructions

    Cup of Yum
  1. Heat the olive oil over medium heat in a large skillet. Add the diced onions and saute for 2 minutes.
  2. Add the chopped garlic, diced bell pepper, and salt, and saute for another 2 minutes.
  3. Push everything to the side of the skillet and add the ground Italian sausage, dried oregano, and garlic powder to the center of the pan.
  4. Brown the ground sausage for 5 to 6 minutes, making sure to break up the pork into small pieces.
  5. Add the tomato paste, marinara sauce, vegetable broth, orzo, and parmesan cheese to the skillet. Stir to combine.
  6. Simmer the mixture for 15 minutes, stirring constantly to prevent the mixture from sticking to the bottom of the skillet.
  7. Add the chopped spinach and frozen peas to the skillet. Stir until well combined, and the spinach has wilted and the peas have cooked through. Serve with more parmesan and some basil, if desired.
