Ingredients
- 3 small acorn squash
- 2 teaspoons avocado oil
- 1 pound Sicilian Chicken Sausage
- 1 large leek sliced
- 2 garlic cloves chopped
- 4 cups kale chopped
- 1/3 cup pecans chopped
- 2 tablespoons Parmesan Cheese shredded
- 1/2 cup chicken broth
Instructions
- Clean acorn squash and cook using the same method as the Pressure Cooker Pumpkin Puree, except cook for 4 minutes.
- In a large skillet add oil and heat over medium. Add sausage and break up into chunks while cooking for about 5 minutes. Remove cooked sausage from skillet and set aside. Add additional teaspoon of oil and add chopped leek until fragrant and soft. Add kale and garlic. Saute for a minute and then add 1/2 cup of chicken broth. Stir in sausage and remove from heat. Fold in pecans. Place cooked squash on a plate and fill with sausage mix. Sprinkle with parmesan cheese.

Notes
- Sicilian Chicken Sausage can be purchased at Trader Joe's or you can use any seasoned sausage of your choice.
- Filling is enough for 8 servings. Serve on the side or enjoy in another meal.
- Serve filling each squash or cut squash in half filling each piece.
- Since first posting this recipe I have provided instructions on preparing acorn squash in an Instant pot. You will get similar results with the pumpkin method mentioned in the post.
