Sausage Stuffed Sweet Potatoes

Ingredients

  • 1 sweet potato baked
  • 2 sausage links paleo approved if necessary, sliced
  • 1 cup greens spinach, kale or mustard greens
  • olive oil

Instructions

    Cup of Yum
  1. Heat 1 tablespoon oil over medium high heat.
  2. Saute sausage for about 5 minutes or until you get some browning on each side.
  3. Add spinach and stir for a minute or two until spinach begins to wilt.
  4. Cut slits in sweet potatoes and fill with sausage and spinach.
  5. Salt and pepper to taste.
