SAUSAGE TORTELLINI SOUP

Ingredients

  • 1 lb Italian sausage mild or spicy, based on preference
  • 1 tablespoon olive oil
  • 1 onion chopped, small
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes, with juices
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package 9 oz cheese tortellini (fresh or frozen)
  • 1 cup baby spinach optional
  • 1 teaspoon basil dried
  • 1 teaspoon oregano dried
  • ½ teaspoon red pepper flakes optional, for heat
  • salt to taste
  • black pepper to taste
  • Parmesan Cheese optional, fresh, for topping

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sausage, breaking it apart with a spoon, and cook for 5-7 minutes until browned and fully cooked.
  2. Add the chopped onion to the pot and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 1 minute, stirring frequently.
  3. Pour in the diced tomatoes with their juices, chicken broth, heavy cream, basil, oregano, and red pepper flakes (if using). Stir everything together and bring to a simmer.
  4. Add the tortellini to the pot and cook according to package instructions, usually about 7-9 minutes, until the tortellini is tender and floating.
  5. Stir in the spinach (if using) and cook for an additional 1-2 minutes until wilted.
  6. Season the soup with salt and pepper to taste.
  7. Ladle the soup into bowls and top with freshly grated Parmesan cheese, if desired. Serve immediately.

Notes

  • You can use ground turkey sausage for a lighter version of this soup.
  • For a more filling version, add extra vegetables like carrots, celery, or zucchini.
  • If you prefer a thicker soup, you can blend part of the soup and return it to the pot before adding the tortellini.
  • Leftovers can be stored in the fridge for up to 3 days. Reheat gently on the stove.
  • You can freeze this soup, but it's best to add the tortellini after thawing and reheating to prevent them from becoming mushy.
