Sautéed Asparagus with Bacon and Dijon

Ingredients

  • 1 slice of bacon
  • 12-15 asparagus spears, woody ends removed, cut into thirds
  • ½ tsp Dijon mustard
  • Sea salt and freshly cracked pepper, to taste
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Cook the bacon in a large skillet over medium heat, flipping it halfway through cooking, until crisp and golden brown.  
  2. Place the bacon onto paper towels to drain.  Crumble the bacon into large bits.
  3. Add the chopped asparagus to the same large skillet with the bacon grease; cook, stirring often, for 4-5 minutes or until crisp-tender.  
  4. Add the Dijon mustard, then season with sea salt and freshly cracked pepper to taste.  Gently stir until evenly coated.  
  5. Toss in the bacon, then serve it immediately.  Enjoy.
