Ingredients

  • 3 Bacon cut into small pieces, strips
  • 1 tablespoon butter salted
  • 1/4 cup white onion diced
  • 3 1/2 cups corn kernels from about 6 ears of corn
  • salt to taste
  • black pepper to taste
  • 1 tablespoon green onions chopped, optional

Instructions

  1. In a skillet over medium heat, cook the bacon pieces until crispy.
  2. Add the butter and diced onions to the skillet with the bacon. Cook for 1 minute or until the onions are soft.
  3. Stir in the corn kernels and cook, stirring frequently, until the corn is tender but not overcooked.
  4. Season with salt and black pepper to taste. Remove from heat. If desired, garnish with chopped green onions.
