Ingredients

  • 1 lb. fresh green beans washed and trimmed
  • 1 tablespoon extra-virgin olive oil
  • kosher salt to taste
  • black pepper to taste
  • 1/2 cup walnuts roughly chopped
  • 4 oz. blue cheese crumbled

Instructions

  1. Heat the olive oil (1 tablespoon) in a large skillet over medium-high heat.
  2. Add the green beans (1 lb.) and salt and pepper to taste, and sauté for 5 minutes, stirring occasionally, until crisp-tender and beginning to brown on the outside.
  3. Remove from heat and transfer to a serving platter.
  4. Sprinkle the walnuts (1/2 cup) and crumbled blue cheese (4 oz.) on top.
  5. Serve immediately.

Notes

  • If you're not a fan of blue cheese, I recommend using crumbled feta, goat cheese, or queso fresco as a more mild-flavored substitute.
