Ingredients

  • 1 tablespoon neutral oil
  • 1 pound baby bella mushroom sliced
  • 3 garlic minced, cloves
  • 1 tablespoon fresh thyme or ½ tablespoon of dried thyme
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 2 tablespoons green onions sliced, optional

  1. Gently heat oil in a skillet over medium heat. When hot, add the mushrooms and cook for 5 minutes, stirring occasionally.
  2. When mushrooms have begun to release their water, continue stirring until they begin to brown. Add the garlic, thyme, and salt and pepper.
  3. Cook an additional minute or two to mellow the garlic and to turn golden. Take care not to let the garlic burn.
  4. Optionally, sprinkle with chives or green onions just before serving.

Notes

  • Clean mushrooms by wiping with a damp cloth to avoid excess moisture.
  • Slice mushrooms evenly for uniform cooking and browning.
  • Preheat the pan to ensure mushrooms sear instead of steaming.
  • Avoid overcrowding the pan; cook in batches if needed to achieve good caramelization.
