Ingredients

  • 2 tablespoons olive oil
  • 1/2 red onion chopped, medium
  • 2 carrot peeled and sliced, medium
  • 1 red bell pepper chopped, medium
  • 2 cups broccoli cut into bite-size pieces, florets
  • 1 zucchini sliced, medium
  • 1 tablespoon garlic minced
  • 1 teaspoon thyme fresh leaves
  • salt to taste
  • black pepper to taste, freshly ground
  • 2 tablespoons parsley chopped, fresh
  • 1 tablespoon lemon juice fresh

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add onion, carrots, and red bell pepper to the skillet. Sauté for about 4 minutes, allowing them to brown slightly.
  3. Add broccoli and zucchini to the skillet and continue to sauté for another 4 minutes.
  4. Add minced garlic, thyme, salt, and black pepper. Sauté for 2 more minutes or until vegetables are tender.
  5. Remove from heat. Sprinkle with fresh parsley and drizzle with lemon juice before serving.
