Ingredients
- 1 lb (500g) yellow squash
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 2 cloves garlic minced
- 1/2 teaspoon salt or to taste
- 3 dashes ground black pepper
- 1/2 tablespoon lemon juice
- 1 tablespoon chopped parsley
Instructions
- Trim both ends of the yellow squash. Cut it into rounds, then slice the rounds in half. Set aside.
- Heat a skillet over medium heat. Add the olive oil and butter. Sauté the garlic for about 1 minute, then add the yellow squash. Sauté the yellow squash and season with salt and ground black pepper.
- Cook for about 1–2 minutes until the yellow squash is cooked but still somewhat crisp. Add the lemon juice and chopped parsley, stirring to combine well. Dish out and serve immediately.
