Savory Bombay Toast (Masala Toast)

Ingredients

For the egg mixture:
  • 3 egg
  • ¾ cup milk subsitute with almond milk for vegan version
For the toast:
  • 1 jalapeño adjust to your spice tolerance
  • ¼ red onions medium size, chopped finely
  • 2-3 prigs cilantro chopped
  • 2 tablespoon cheddar cheese grated fresh
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper or a couple of twists, to your liking, fresh ground
  • 2 tablespoon butter split evenly across each slice
  • 4 lices bread preferably brioche

Instructions

  1. In a bowl (shallow and wide enough to hold a full slice of bread) - whisk eggs and milk together
  2. Add finely chopped jalapenos, red onions, and cilantro and whisk well
  3. Add shredded cheddar cheese along with salt and pepper and mix well
  4. Heat a cast iron skillet (or pan) on low to medium flame - melt butter
  5. Dip a slice of bread in this egg mixture and place on the pan - cook for about 3 minutes until the bottom is brown
  6. Flip over and cook for another 3 minutes until the other side is brown
  7. If you want, add more cheese to the top and garnish with more fresh cilantro - serve hot!

Notes

  • The egg-to-bread ratio should saturate bread without making it soggy; some trial and error may be needed.
  • Cook on low to medium heat to avoid burning while allowing the egg to cook fully.
  • A cast iron skillet is preferred for even heat distribution, though it takes longer to warm up.
  • Butter-rich bread like brioche or challah enhances flavor and texture but any bread can be used.
  • This recipe originated as a way to use stale bread.
